Knead the dough on a floured surface for 8-10 minutes, or until it becomes smooth and elastic.

Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Preheat your oven to 220°C (425°F). Grease a baking sheet or line it with parchment paper.

Pour the remaining olive oil onto the prepared baking sheet. Using your fingers, press and stretch the dough out to the edges of the pan.

Make dimples on the surface of the dough using your fingers. Drizzle with a little extra olive oil, and sprinkle with coarse sea salt.

Bake for 20-25 minutes, or until the focaccia is golden brown and crisp.
